When we talk about bacon, it refers to the kind of Chinese traditional meat products, which is made from salted meat by smoking or drying during the twelfth lunar month of each year.

Bacon has a long history in china. While the south prefer pickled pork and the north prefer pickled beef. There are many kinds of bacon and all have their own features due to different original places and processing methods.

Then I will introduce the general steps of how to make bacon.

First, wed prepare some original materials. We need salt, spice, wild pepper, aniseed, ginger and meat. Wed better choose short meat, for example, 3-4 ribs for a large peace. Second, we use the prepared condiment to rub the meat evenly until the color turns red and the gap is full of salt. Third, we need to put the meat into vessel, with the bamboo overhead the bottom, then we can put the meat on the bamboo so that the brine will not soak the meat. The main steps have finished and what you need to do is wait three or four days and then dry the meat in the sun. Drying is the essential process for it can make the meat more delicious. When the surface of the meat becomes toughen, the bacon is successfully accomplished.

We can cook bacon in many different ways. For example, we can boil it with tempeh and cook twice-cooked pork. We can also cook bacon melon soup. Each kind of cooking is appetizing.
